Last night, I had the pleasure of attending a special workshop organized by the Istanbul Guides Chamber and Deraliye Restaurant, led by the restaurant’s owner and Executive Chef, Necati Yılmaz. The event, titled “From Nomadic Culture to Palace Cuisine,” took us on a journey through centuries of rich and diverse Turkish gastronomy.

Throughout the workshop, we discussed the evolution of Turkish cuisine over the centuries, exploring its transformation into Ottoman palace cuisine. During this insightful session, we also had the opportunity to prepare and taste a special dish from the palace kitchen.

For nearly ten years, I have been recommending Deraliye Restaurant to my guests with great confidence. Chef Necati’s contributions to Turkish gastronomy are truly remarkable. His dedication to researching the Ottoman palace archives and reviving dishes from the 15th to 18th centuries is invaluable.

One of the most impressive revelations of the evening was learning about his two-year research project tracing the culinary traditions of the Hittite civilization, which led to the creation of a brand-new menu. This is an extraordinary achievement and a significant contribution to the world of gastronomy.

The Hittite Menu, is a meticulously crafted dining experience that transports guests back to the era of the Hittites, one of Anatolia’s earliest civilizations. Available exclusively on Thursdays and Fridays from 19:30 to 21:45, this limited-seating event is priced at 2,750 TL per person, inclusive of VAT. The menu is presented in specially designed clay tableware, reminiscent of artifacts from museums in Çorum, Boğazköy, and Alacahöyük, enhancing the authenticity of the experience.

The Hittite Menu features a selection of dishes that showcase the culinary practices of this ancient civilization. While the exact menu items are not detailed in the available sources, guests can anticipate a variety of traditional dishes prepared using historical methods and ingredients, offering a unique glimpse into the flavors that once graced the tables of the Hittite people.

Besides having a good food experience in the restaurant ,for those eager to delve deeper into the secrets of Ottoman palace cuisine, Deraliye offers immersive cooking classes led by Chef Necati Yılmaz. Participants have the opportunity to learn ancient recipes and techniques, preparing dishes that were once favored by sultans. The hands-on experience culminates in a meal enjoyed on Deraliye’s beautiful terrace, offering breathtaking views of Istanbul. Upon completion, participants receive a certificate to commemorate their culinary adventure.
